Recipe👇 Healthy Crunch Avocado Salad ✨ Inspired by @shredhappens 🙌 and had to try my own twist on it! Fresh, vibrant, and full of flavor 🥒✨ This avocado salad with customer, pomegranate, walnuts, and a touch of sumac is light, crunchy, and naturally dairy-free. The lemon and olive oil bring everything together for the perfect refreshing bite. ⸻ 📝 Ingredients • 2 large seedless cucumbers (shaved into ribbons or thinly sliced) or 4–6 mini seedless cucumbers • 1/2 small red onion, sliced • 1–2 avocados, cut into small cubes • 1/2 cup toasted walnuts, chopped • 1/2 cup pomegranate seeds • 1/4 cup fresh parsley, finely chopped • Zest + juice of 1 lemon • 2–3 tbsp olive oil • Salt & black pepper, to taste • 1–2 teaspoons sumac ⸻ 👩‍🍳 Instructions 1. Thinly shave or slice the cucumbers and place them in a large bowl. 2. Add the sliced red onion and cubed avocado. 3. Add chopped walnuts and pomegranate seeds. 4. Stir in the fresh parsley. 5. Add the lemon zest, lemon juice, olive oil, salt, pepper, and 1 teaspoon sumac directly over the salad and gently toss until everything is evenly coated. 6. Serve immediately for best freshness.
